PANAMA CITY - Introducing older kids to the kitchen by helping them with create recipes for crowd-pleasing pizza and cookies is a great way to get them interested in cooking — and usually leads to more adventurous eaters.
Somethin's Cookin', 93 E. 11th St., regularly hosts cooking classes for children, ages 7 to 14, with owner Hannelore Holland. On March 20, her class featured the return of the popular recipe for Ted and Lynn’s Little Calzone Pizzas that was created by her son, Ted, and his best friend, Lynn McArthur, 35 years ago when they were kids.
And on the recent Saturday, Ted's wife, Beth Holland, joined the class to demonstrate her easy recipe for great Chocolate Chip Cookies.
Both recipes for pizza and cookies again will be featured in the April 24 Just for Kids cooking class. Reservations are required by calling 850-769-8979. For more information, visit https://ift.tt/3smVJbc.
TED AND LYNN’S LITTLE CALZONE PIZZAS
Pizza dough: 2 cups flour, 1 tablespoon yeast, pinch of sugar, 1 tablespoon salt, 2 tablespoons oil (plus more for brushing), Italian seasoning, pesto (optional)
Italian seasoning
Olive oil, mixed with pesto
1 cup tomato sauce
1 cup mozzarella cheese or white cheddar
Parmesan
Optional toppings: Pepperoni, mushrooms
To make pizza dough: Take 2 cups flour and mix with 1 cup warm water with 1 tablespoon of yeast and a pinch of sugar. Add 1 tablespoon of salt and 2 tablespoons of oil. Mix it all together and add a little bit of Italian seasoning; let dough rise until doubled, about 20 to 30 minutes. Now divide into four or six little pizzas, depending how big you want your pizza. Brush with olive oil and pesto paste.
Top with tomato sauce, cheese and toppings of your choice. If you desire, fold over for a calzone; brush again with olive oil and pesto. Bake in a 425-degree oven for about 10 to 12 minutes.
Make ahead: You prebake your crust ahead of time, after brushing with the olive oil mixture, in a 425-degree oven for seven minutes. Now cool; do your topping and bake whenever you want in a 375-degree oven for another seven to eight minutes.
