
I’m a big fan of random kitchen gadgets. I’ve been like this since I was little and begged Mom and Great-Grandma for a Snackmaster sandwich maker. I think I was around 4 at the time.
Over the years I’ve added pretzel, cake pop and mini pie makers just to name a few. When these items are deeply discounted, especially around this time of the year, they simply hard for me to pass up. This year I fell prey to the pizzelle maker. I pictured making beautiful and delicate cookies much like the ones my Daughters of the American Revolution pal Joan Chambon makes for our special meetings. Mine turned out a little less lacy and delicate although the surprisingly past the taste test of cookie connoisseur and coworker Todd Lancaster.
I’m not sure exactly where I went wrong. I measured and mixed all according to the directions but my pizzelles all turned out a bit lopsided. I’m hoping to try a different recipe that will not only taste good but will look a little nicer as well.
Drop cookies are some of my favorites to make, especially if they involve butterscotch. Mom and I have been making haystacks for a number of years and they never last quite long enough.
Drop Cookies
Here’s what you’ll need:1 bag butterscotch chips
1 cup of peanut butter ( I use chunky)
1 package (10-12 ounces) of chow mein noodles
4 cups of mini marshmallows
Line baking sheets with parchment or wax paper.
Melt butterscotch chips and peanut butter over medium heat until melted. Add in chow mein noodles and mini marshmallows and mix until mixture is well coated. Use a large cookies scoop to drop the mixture onto the covered cookie sheets. Let dry before eating if you can wait that long.
