Matt and Heather Dallmann opened the first local location of the Utah-based franchise on July 16 and it's been an instant hit.
"Salem loves their cookies," Matt said.
Located in the former Payless Shoes location at 717 Lancaster Drive NE, the bakery specializes in big, freshly baked cookies. Many, including the chain's signature milk chocolate chip, are served warm out of the oven. Their sugar cookies are served chilled, a fudgy sweet treat.
Crumbl cookies are decorated to order, icing piped on and toppings applied, so the experience is more like getting something at a cupcake bakery rather than simply reaching into a cookie jar.
Instead of a case full of hundreds of flavors, the bakery only offers six cookies each week. Flavors rotate, showcasing seasonal ingredients. Some only come up in the rotation once per year.
A single large cookie is $4, a box of four is $13 and a dozen are $29.
Recently, the lineup included a sugar cookie with a raspberry lemonade icing, and a churro cookie stuffed with gooey Nutella.

Each Sunday evening, Crumbl announces the flavors for the week via social media. Recently, the company has expanded to offer six flavors of ice cream as well, available by the half-pint ($4) of by the carrier -- four half-pints ($13).
Curbside pick-up is available for pre-orders and Crumbl Cookies are also available through Door Dash.
A sweet family business
The Dallman family used to live in Portland. They tried their first Crumbl cookie after relocating to Utah. Two cousins opened the first Crumbl location there in 2017 and the company has recently opened its hundredth location.
Though the Dallmann's is the first in the Salem area, it's the sixth Crumbl in Oregon. There are two locations in Beaverton, and one each in Clackamas, Eugene and Medford.
Heather Dallmann was drawn to the prettiness of the bright white store, the simplicity of the menu, and the gourmet flavors of the cookies themselves. "We walked in and I said 'I want one of these,'" she recalled.

An avid home baker, she previously sold hand-decorated sugar cookies. Though she liked cookie decorating, "I wanted it to be easier." Crumbl's streamlined approach felt like a good compromise.
They, along with their two sons, moved to Salem to open the business.
Said Matt, "We always wanted to come back to Oregon."
