Ingredients
- 4 cups butter-flavored shortening
- 4 cups peanut butter
- 3 cups sugar
- 3 cups packed brown sugar
- 8 eggs
- 4 teaspoons vanilla extract
- 2 teaspoons water
- 9 cups flour
- 4 teaspoons baking soda (Anna uses 2 teaspoons baking powder and 2 teaspoons baking soda, which gives a lighter-colored cookie)
- 4 teaspoons salt
Directions
In a large mixing bowl, cream shortening, peanut butter and sugars. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla and water. Combine flour, baking soda and salt. Gradually add to creamed mixture.
Drop by heaping tablespoon 2 inches apart onto ungreased baking sheet. Flatten with fork. Bake at 350 F for 12 and 15 minutes or until golden brown.
Note: This recipe can halved to fit into a mixing bowl.
These cookies are delicious and more so with the cookie half coated in chocolate. Enjoy the summer and all the new recipes.
