Olympics Medal Cookies | Butter Cookies | The Foodie - Times Now

As the Olympics fever is upon us, here are some amazing butter cookies to munch on as you watch the best in the world competing for the gold!

Ingredients Required to make Olympics Medal Cookies - 

200 gm Butter
¾ cup Castor Sugar

2 Egg Yolks

1 tsp Vanilla Extract 

1 ¼ cup Refined Flour 

1 tsp Baking Powder

Pinch of Salt 

For the Glaze Icing 

2 cups Icing Sugar

4 tbsp Milk

½ Lemon Juice 

3 drops Lemon Yellow Food Colour 

For the Fondant Circles 

250 gms Plain Fondant 

Food Colours - Blue, Yellow, Green, Black, Red 

Method:

1. For the cookies, cream the butter, sugar & vanilla extract for 3 mins till creamy & slightly grainy 

2. Now add the flour, baking powder & salt, mix for 1 minute till combined.

3. Place on your work surface & shape into a block, wrap with plastic wrap & refrigerate for 20 mins

4. In the meanwhile prepare the yellow glaze icing, mix the ingredients in a bowl till combined & smooth, transfer to a piping bag & keep aside.

5. Next prepare the fondant circles, take the plain fondant & divide it into 5 portions, colour each portion with the respective colour & keep covered.

6. Now roll out each coloured fondant & cut it into tire shaped circles

7. Keep them on a plate & let them dry out for 15 mins till hard.

8. Now for the cookies, roll the dough out & cut it into 4inch circles. Make 2 holes on the top for the ribbon & place on a baking tray & bake at 160c for 15-20 mins

9. Let them cool off completely the ice with the yellow sugar glaze.

10. Let the glazed cookies dry out for 2 mins at room temperature.

11. Next, place the coloured circles in the pattern & let them dry out for 5 mins

12. Place the ribbon in the cutout portion & serve at room temperature
