Baked with Grace started out as an activity to pass the time during quarantine and has now become a local sensation.
“I was just super bored and I had never baked before in my life,” said Grace Reilly, founder of the online bake shop. “The whole idea kind of came from when I used to babysit, I would bring cookie dough to the boys I babysit every week and they would always ask me to bring different fillings.”
So she started stuffing the cookies with all kinds of fillings, like mint Oreos, sprinkles, you name it.
After some research of what she could put the stuffed cookies in, she came up with the final product: the cookie pie. A cookie pie is baked in pie tins and filled with all different flavors. Baking them in tins allows the cookie to come out thick and gooey.
The 21-year-old soon started posting her creations online, quickly amassing a large social media following.
Her signature cookie pies include birthday cake, chocolate chip, rainbow cookie, brownies and cream, peanut butter cup, peanut butter Oreo, and cinnamon roll.
Now the Farmingdale State College architecture student is taking her business brick-and-mortar.
In a few weeks, she’ll be launching a storefront in downtown Babylon at 65 Deer Park Ave., next to Barrique.
“I never, ever in a million years envisioned myself in a baking situation,” Reilly said. “I always wanted to be an entrepreneur and be my own boss, so when this happened I just went with it.”
In addition to selling cookie pies out of her storefront, Reilly’s cookie pies are available at select locations across the island, including Fat Boys Burrito Co. in Bellmore, Coliseum Kitchen in Plainview, Gabby’s Gourmet Deli in Woodbury, Gemelli’s Fine Foods in Babylon, Uncle Giuseppe’s Marketplace and a few Gala Fresh Supermarkets on Long Island. She also ships to all 50 states.
