On Mother’s Day, thoughts go back to love, lessons for life and cookies. And even though they are gone, many women who lived around Grand Forks are remembered for the cookies that came out of their kitchens.
Although she is gone, Ruth Montgomery has long been remembered for her white cookies. She lived in the north end of Grand Forks. And she had cookies waiting in the afternoon for neighborhood children heading home from school.
She years ago shared her recipe with the Herald, as follows:
- ½ cup white sugar
- ½ cup powdered sugar
- 1 stick margarine
- 1 beaten egg
- ½ cup salad oil
- Then a touch of salt
- 2 teaspoons of vanilla
- 2 cups of flour with ½ teaspoon of baking soda and ½ teaspoon cream of tartar
She would roll the dough in tiny balls and press them down with a fork or the bottom of a glass dipped in sugar. Then she would bake them at 350 degrees for eight to 10 minutes. And she waited for neighborhood children to drop by.
People like Ruth Montgomery are still, in heart, around on Mother’s Day each year.
Oatmeal Rocks
Then there was Aunt Laurine Linnett. She lived down at Tyler, Minn., with Uncle Harold – who always suffered from what they said was gas during World War I.
To make the cookies, she used:
- 1 cup of sugar
- 1 cup of lard
- 2 eggs
- 5 tablespoons of sour milk
- 1 teaspoon of cinnamon
- ½ teaspoon of baking soda
- 1 cup raisins
- 2 cups of flour
- 2 cups of oatmeal
- “A pinch of salt.”
Yes, and then ½ cup of chopped nuts, if desired.
The recipe card is old, but the handwriting and memories of Aunt Laurine come alive on Mother’s Day.
Children’s Fudge
The late Pat Lander knew her kitchen well as she and Robert raised their family in Grand Forks. She had a quick recipe for fudge, as follows:
- 1 large 12-ounce package of chocolate bits
- 1 cup creamy peanut butter
- 2 tablespoons of butter
Melt chocolate, peanut butter and butter together. Pour over small marshmallows in pan.
Oatmeal Chocolate Chip Cookies
When her husband was governor of North Dakota, the late Mrs. Art Link was sometimes baking cookies. And she shared the following favorite with Herald readers:
- 2 cups of soft shortening
- 1 1/3 cups brown sugar
- 1 1/3 cups granulated sugar
- 4 eggs
- 2 tsp. vanilla
- 2 tsp. salt
- 3 cups flour
- 2 tsp. soda
- 4 cups oatmeal
- 4 pkgs. chocolate chips (6 oz.)
- 1 cup nutmeats
Mix and drop by spoonfulls on cookie sheet. Bake in 375 degree oven.
