Following the most meaningful reason to celebrate Easter, get-togethers with family and other loved ones is an important part of the holiday. Another Easter tradition we look forward to involves chocolate, whether it’s chocolate bunnies, chocolate covered marshmallow eggs, chocolate kisses or any other chocolate treat.

If you’re looking for a chocolaty dessert to go with your Easter dinner, these Chocolate Chip Pudding Cookies will do the trick. They’re tasty and handy to take with you if you’re planning an egg hunt with the kids after dinner.

These cookies are quick and easy to make, and they can be made the day prior so you have extra time to appreciate the joy of Easter Sunday.

If you’d like a refreshing drink to go with your dinner or dessert, you could make a pitcher of fruit punch by mixing a can each of orange soda, Mountain Dew and sparkling peach juice together in a pitcher and then add two scoops of ice cream and stir again.

CHOCOLATE CHIP PUDDING COOKIES

2/3 cup butter, softened

2/3 cup brown sugar

1/4 cup white sugar

1 large egg

1 teaspoon vanilla

1 regular size box of chocolate pudding mix (not instant)

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/8 teaspoon salt

1/2 cup chocolate chips

1/2 cup chopped nuts

Directions:

Preheat oven to 350 degrees. Lightly grease two cookie sheets.

Beat together: butter, brown sugar and white sugar. Beat in the egg. Pour in the vanilla and mix until smooth.

Add the pudding mix and stir until smooth. Then add the flour, baking soda, baking powder and salt; stir together until smooth. Fold in the chocolate chips and nuts.

Drop by teaspoonfuls onto greased baking sheets and bake for 10-12 minutes. Remove from baking pans and let cool on waxed paper. Makes 3 dozen cookies.

NOTE: Cookies will be soft to the touch when they come out of the oven, but will harden as they cool.
