INSeason: Easy oatmeal bar cookies are sure to please - The Herald Bulletin

Sometimes there’s just not enough time to make a whole batch of cookies. When that’s the case, bar cookies are my go-to. Almost any cookie can be made in a pan but I’ll admit that some varieties work better than others.

These oatmeal bar cookies follow the same recipe as the traditional cookie except they use dark brown sugar and take only about 30 minutes to bake.

Oatmeal Bar Cookies

2 1/2 sticks of salted butter, softened

1/2 cup granulated sugar

3/4 cup dark brown sugar

1 egg

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 cups of old fashioned oats

optional: 1 cup of chocolate, peanut butter or butterscotch chips or 1 cup of nuts

In large bowl, beat margarine and sugars until creamy. Add egg and vanilla; beat well. Add combined flour, baking soda, cinnamon, salt and nutmeg; mix well. Add oats and optional ingredients; mix well.

Press dough onto bottom of ungreased 13 x 9-inch baking pan. Bake 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars. These also freeze well.

On a gardening note, if you plan to start your own plants this year, now is really the time to order. Several seed companies are already sold out of many varieties of seed and in some cases, the recommended substitutes are also no longer available. Order early for best selection.
