Recipe: Koulourakia cookies - Houston Chronicle

2 sticks unsalted butter

¾ cup sugar

2 large eggs

½ teaspoon vanilla

1 ½ tablespoons bourbon (optional)

4 cups flour

Pinch baking powder

Beaten egg, for egg wash

Sesame seeds

Instructions: Cream butter and sugar. Add eggs one at a time and beat at least 10 minutes. Add vanilla and bourbon; mix to combine. Gradually add flour and baking powder until dough comes together.

Take enough dough in your hands and roll into about 4-inch lengths that are about ¼-inch in diameter (or thicker if you like). Shape the length into a figure eight. Place on a parchment-lined cookie sheet. You may place them relatively close together because they do not spread.

Brush the tops with egg wash and sprinkle with sesame seeds. Bake in a preheated 350-degree oven for about 25 minutes and bake until slightly golden without burning bottoms.

Makes about 60 cookies

Note: We used about ¼ teaspoon baking powder as the “pinch.” This dough is easy to work with and shape into figure eights without additional flour. The slightly sweet cookie is perfect to enjoy with coffee.
