Recipe: Forgotten Cookies - Houston Chronicle

Recipe:

2 large egg whites at room temperature

½ teaspoon cream of tartar

2/3 cup sugar

1 teaspoon vanilla

1 cup mini chocolate chips

Instructions: Preheat oven to 350 degrees. Line two large cookie sheets with parchment paper.

Using a handheld or countertop mixer, beat egg whites until foamy. Beat in cream of tartar. Add sugar and vanilla extract, and continue beating until sugar is dissolved and meringue comes to a stiff peak. Using a rubber spatula, fold in chocolate chips.

Drop by teaspoonfuls onto lined sheets. Place in oven and reduce temperature to 200 degrees. Bake for 2½ hours.

Makes about 24 cookies

Note: The recipe is gluten free. These glossy meringues are pretty and light but hold plenty of chocolate flavor. You can modify the recipe by adding peppermint extract and red food coloring as well as chopped nuts.
