Shortbread continues to rule on all fronts. “Shortbread is undoubtedly one of the best cookies out there,” says Rob London, of Gay Lea Foods (www.gaylea.com), whose shortbread recipes are lauded throughout the land. “While we’ve spent countless hours perfecting our shortbread recipes, it’s without question that it all comes down to the butter,” added London in a recent email.
That’s the key notes executive chef Brad Long in his award-winning book, Butter. Long reveals that a good, decent shortbread cookie can be transformed into the stuff of dreams by placing freshly baked shortbread into a tin, “shove it to the back of your pantry, somewhere cool, and forget it for a few months.” What you’ll find is that “umami has found its new home in your shortbread.”
So go ahead and bake and create. This beloved cookie is simplicity personified, yet made up of layers of subtle, complicated nuances and flavour. If the holidays had their own taste, we’re pretty sure it would be a shortbread cookie.
Signature Shortbread
Adapted from Gay Lea’s famous shortbread cookie (www.gaylea.com/recipes)
2 cups (500mL) unsalted butter, softened
1/2 cup (125mL) fruit or granulated sugar
1/2 cup (125mL) icing sugar
1 tsp. (5mL) pure vanilla
3 cups (750mL) all-purpose flour
1 cup (250mL) cornstarch or rice flour
1 tsp. (5mL) salt
Using electric mixer, beat butter until very creamy. Gradually beat in sugars, beating until very light and fluffy. Beat in vanilla. In separate bowl, combine flour, cornstarch and salt. In four additions, using a wooden spoon, stir flour mixture into butter mixture, stirring well between each addition. Transfer dough to floured surface; knead gently for 3 minutes until shortbread holds together well. Divide into three balls. Wrap each ball with plastic wrap; flatten into discs and refrigerate for 1 hour.
