It's almost time for Lexington's new gourmet cookie store to hold its grand opening.
The announcement was initially made at the start of September that Crumbl Cookies would be opening in the Target shopping center at 5119 Sunset Blvd. Owners Tyler Hinckley and his wife Erin announced last week the shop's opening day is scheduled for Dec. 3, pending a final inspection from corporate Tuesday.
Hinckley said it's been incredible to watch the space transform, which was formerly occupied by Windstream Communications. Now that the remodeling is finished, employees will begin their training Monday, Nov. 30.
"We'll start training them in how to make the cookies, so that they're ready to go for our customers. We're a gourmet cookie shop so we have to have the best cookies possible," he said. "We focus on customer service, cleanliness, and cookie quality."
Crumbl will offer six cookie flavors, with chocolate chip and chilled sugar as the two permanent options. The other four will rotate each week. Hinckley said the company announces their upcoming flavors every Sunday night, so he can't say what the opening-week flavors will be yet. However, flavors for this week include options like chilled pumpkin pie, peach cobbler and salted caramel cheesecake.
In addition to cookies, the store will also offer six flavors of 'Crumbl cream' specialty ice cream. Hinckley named ice cream flavors like muddy buddy, buckeye brownie, raspberry cheesecake, churro and Biscoff.
The store will hold "free chocolate chip cookie day" Dec. 4, the day after the grand opening. Everyone will also receive 20% off a box of four cookies (Dec. 4 only).
Crumbl will offer takeout, curbside, delivery and catering services. According to Hinckley, there are additional flavor options for catering.
