Gluten Free Baking Co. in Wallingford offers pumpkin spice cookies and other gluten free fall treats - Meriden Record-Journal

WALLINGFORD — It’s the season for all things fall and for many that means pumpkin spiced treats or apple cider donuts at the orchard.

For those who have cut gluten out of their diet, however, this is usually not an option.

According to the Celiac Disease Foundation, gluten is a protein found in wheat, barley, and rye and is in all sorts of foods including flour, bread, cereal, and more.  Gluten causes a problem for the 1 in 100 people with Celiac Disease — an autoimmune disease where ingestion of gluten causes damage to the small intestine—as well as people with gluten or wheat sensitivities, allergies, and intolerances.  

Gluten Free Baking Co is helping with a variety of gluten free and dairy free treats this season. Owner Marissa Maturo was forced to go gluten and dairy free due to a medical condition three years ago. She said it inspired her to fill a need in the community for affordable gluten and dairy free baked goods.

“I have no formal training but started decorating cakes as a kid and have always loved to bake,” Maturo said.

Everything sold at Gluten Free Baking Co is both gluten and dairy free and labeled for other allergens as well. The bakery opened last year and is based out of Maturo’s home. She is a licensed Cottage Food Operator through the State of Connecticut.  

While her kitchen isn’t exclusively gluten free since she is the only member of her family with an intolerance, Maturo goes through precautions to make sure the products are safe for customers with Celiac disease. This includes using dedicated cooking equipment, dedicated cleaning supplies, a two-step cleaning process prior to baking, and not allowing any regular flour in the household.  

Maturo offers a wide range of seasonal desserts — apple cider doughnuts, apple crisp, and pumpkin cookies for the fall or lemon loaves and squares for the spring.  She also offers sampler boxes so customers can try a variety of treats. Since the bakery is run out of her house, products are only available through pre-order and can be shipped anywhere in Connecticut or picked up at her home.
