The local cookie company is selling bags of cookie mix at its 12South shop

It's not hard to get your hands on Christie Cookies — they have a walk-up window at their 12South shop (2606 12th Ave. S.), which is perfect for low-contact transactions, and they also offer both local delivery and nationwide shipping. (The August Cookie of the Month is Confetti, by the way.)
Still, as good as a Christie Cookie is, it's hard to top the goodness of a home-baked treat that's still warm from the oven.
Now, Christie Cookies has that, too.
This summer Christie Cookies started selling bags of cookie mix at their 12South shop for $10 a pop. Right now there is only one flavor, snickerdoodle, which comes with a bag of cookie mix and cinnamon sugar mix. You just add a stick of butter and an egg.
I was skeptical — I rarely enjoy a dry, store-bought cookie mix. They always taste a little off. But these surprised me — they tasted great. And no, snickerdoodles aren't hard to make, but being able to go from no cookies to delicious warm cookies in about 15 minutes was pretty amazing. I didn't have to break out the mixer, I didn't have to dirty more than one bowl.
My first batch was a little smaller and more cakey than chewy, so I recommend making the balls of dough slightly larger than the package suggests so they're able to spread out a little more. The edges crisp up, the middle stays fluffy and it all makes for the perfect chewy bite of warm cinnamon-and-sugar comfort.
The next day, being the genius I am, I sandwiched some vanilla ice cream between two of 'em. Delicious! Obviously.
Now my mind is reeling with ideas — maybe I'll try baking it into one big skillet cookie! Or what if I spread all the dough out into a sheet pan and use it as the crust of a fruit "pizza"? Mmm ... snickerdoodle pie crust. Would snickerdoodle pie crust work? I might have to find out.
