Cookie Therapists Ashley Brown and Faye Jones are cutting this week's "RX" cookies for their weekly Instagram post — a selection of a half-dozen 6-ounce gourmet stuffed cookies they've crafted recipes for.
Outside the Old Daley Catering Building in Troy, they've taped up a piece of bright pink cardstock while another employee carries the tray of cut cookies and Jones stands with her left hand out. Then Brown carefully selects a half-slice of each flavor from the tray.
"It's tricky," Brown said. "Because we don't really like to fake anything; we just kind of want it to work out naturally perfect."
Brown is stacking the half slices on Jones' hand and it takes a little bit of effort. They don't put a skewer through the cookies, or use anything to hold them up.
OK, are you ready?" Brown asks Jones. "It's time to let go."
Jones removes her right hand from the stack, and it's time to get a couple of quick snaps with an iPhone and hope the cookie tower doesn't topple.
The pair of entrepreneurs have had to let go a little bit, too. They started Cookie Therapy ALB at the beginning of the coronavirus pandemic, and their over-the-top cookies took off on social media.
"The word kind of started to spread. We're a very social media-driven business," Brown said.
The word started to spread on Instagram in particular, where they already have more than 10,000 followers. The pair started out by baking their cookies in their own kitchens and delivering them to first responders and health care workers.
"We weren't really setting out to start a business as much as we were stress baking," Jones said.
That stress baking has led to tens of thousands of people getting to experience Cookie Therapy ALB.
They've hired enough staff to help them run all of their operations now — everything from actually making the cookies from the recipes they've created, to helping with social media, and organizing their "Drop-in Therapy," which is part of the giving mission that originally started the business, and surprising essential workers around the Capital Region each week with cookies.
So, while the pair are spending less time in the kitchen and more time at desks in their office these days, "This is the stillest you'll ever find us," Brown said, sitting at her desk. "We probably would've been up and down 10 times, had you not been standing here!"
That's because these "cookie therapists," as they call themselves, are working to make sure anyone can get a session any time they need one.
"We do our orders on Sunday nights, so on Monday morning, it's a lot of organizing orders and get everything set up," Brown said.
Their flavor "drops" are restocked each week, which they post on social media, and they are accepting about 1,200 orders, which typically sell out within minutes and are now shipping nationwide.
