These nostalgic peanut butter cookies reimagine one of your favorite childhood desserts - Salon

If you were born after the '50s, there's one holiday cookie that will instantly make you nostalgic for your childhood: the peanut butter blossom. It's hard to imagine a world without sweet peanut butter cookies paired with milk chocolate Hershey's Kisses, but such a place existed before 1957. The origins of this retro dessert trace back to the legendary Mrs. Freda F. Smith from Ohio, whose original recipe won the Pillsbury's Bake-Off Contest. One huge fan of these timeless sweets is Salon's resident pastry chef, Meghan McGarry of Buttercream Blondie.

"I would bake peanut butter blossoms every year over the holidays with my Nan growing up," McGarry recalls to Salon. "So many life-long memories are made in the kitchen. A couple of years ago, I came across Nan's recipe when I was cleaning out my cookbooks to work on my own. In an instant, happy thoughts of our time baking together rushed through my head. I smiled."

To honor Nan and the other grandmothers like her who've passed down their own versions of this retro recipe to the next generation over the decades, McGarry did what she does best. The pastry chef gave classic peanut butter blossoms one of her signature dessert makeovers, which reinvents them for adults who are still kids at heart. Her grown-up version of these nostalgic cookies are perfect for Halloween, because they're no tricks — just treats. But you'll want to print out the instructions to add to your own recipe collection so you can revisit it throughout the year.

The result: McGarry's Easy Peanut Butter Cups, which feature bourbon peanut butter cookies, a spiked dark chocolate ganache, peanut butter drizzle and flaky sea salt. The bourbon, brown sugar, peanut butter and sea salt all work together to create the perfect salty-sweet bite. Upgrades aside, these easy-to-make cookies still taste like nostalgia.

This new recipes solves an age-old problem: When you press a chocolate Kiss inside an traditional peanut butter blossom after it comes out of the oven, it feels like it takes forever for it to set. Sometimes, they fall out as soon as you take a bite. And there's no sadder fate for a piece of chocolate than seeing it wind up on the floor. 

To solve this, McGarry swaps the traditional Kiss with her homemade bourbon dark chocolate ganache. McGarry makes her cookies in a mini-muffin in order to create a cookie cup. When you take her cookies out of the oven, you immediately create an indentation in the center of each one. This creates a cup to hold the ganache, ensuring that every bit of chocolate ends up where it belongs: your mouth.

While this dessert would taste perfect if you stopped there, McGarry takes her makeover one step further by dressing up her cookies with a simple yet refined peanut butter drizzle. As the old adage goes, "The more peanut butter, the better." And the icing on the proverbial cake is flaky sea salt.

One of the best part about these cookies is how easy it is to personalize them. While McGarry recommends dark chocolate for the ganache, you can pick your favorite chocolate (or whatever you have on hand). You can swap the flaky sea salt with crushed honey roasted peanuts if you prefer something on the sweeter side. Rainbow sprinkles also add a festive touch around the holidays.

Peanut Butter Cookie Cups:

  • 1 and 3/4 cups AP flour
  • 1/4 tsp. salt
  • 3/4 tsp. baking soda
  • 4 ounces (1 stick) unsalted butter, room temp.
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tsp. vanilla bean paste, or extract
  • 2 Tbsp. bourbon
  • 2 tsp. heavy cream

  1. Preheat oven to 375 degrees. Coat a mini muffin pan with cooking spray.

Kids Trick-Or-Treat From the Backseat in Madison - Spectrum News 1

FITCHBURG, Wis.— Families all over Wisconsin are finding ways to make Halloween special for kids. 

In Fitchburg, that started with a drive-thru. Sabrina Madison of the Progress Center for Black Women had the idea to try to give kids some sort of Halloween experience they may be missing this year. 

“My son is 25 now, but my son trick-or-treated ’til junior in high school. I just miss that,” Madison said. “We don’t have the sounds of kids getting off the school bus anymore. We were like, I miss kids outside trick or treating.” 

People would pull up, pop their trunk, and get information about the Progress Center, mini pumpkins, kits for kids to decorate them, and a few other goodies. And of course, candy. 

Someone would drive up to the tables, and immediately the gabbing began. Even between strangers, it was as if two old friends were seeing each other for the first time in a while.

For some families, the drive-thru was their only opportunity to show off their costumes. Kids showed up as Spiderman, a cat, Cookie Monster, and The Flash. The overall favorite of the day was Squirrel Girl, whose parents were also dressed like squirrels. 

Also in the drive-thru were three Black women-owned businesses. People pre-ordered treats from LushLife Vegan Bakery, Melly Mel’s Soulfood, and Mo’Betta Butter Cookies. 

“We need to create opportunities for [these businesses] to generate more income during this time,” said Madison. 

Hundreds of families showed up to pick up candy for their kids, or sweets from the vendors. 

“We’re in quarantine, we’re in a pandemic,” Madison said. “Folks are missing some of those opportunities to just engage and hang out and socialize.” 

“We provided this safe way just to provide a little bit more joy on top of what we're experiencing right now.”

Inside the Journey Cookies Cannabis Strains Made to Colorado | Westword - Westword

Colorado was hungry for Cookies by the time it finally entered the market this year.

Born in 2012 in California, Cookies is a child of both the cannabis and hip-hop worlds. It was founded by two legends: Berner, aka Gilbert Milam Jr., a rapper and entrepreneur from the Bay Area; and Jigga, a renowned cannabis grower and breeder who was a member of the mythic growing collective known as the Cookie Collective, or Cookies Fam. From these not-so-humble beginnings, it evolved from a beloved strain and San Francisco streetwear clothing storefront to an international group of lifestyle brands — Cookies, Lemonnade, Minntz and Grandiflora — all under the Cookies umbrella. Each line is a part of Cookies’ unique cannabis ecosystem, in which every breeder has their own label.

Cookies storefronts are now popping out of the oven around the world. The company welcomed a cannabis club in Barcelona this year; it already had numerous dispensaries across California. Through grower partnerships, the brand can now be found in every adult-use legal market in the country, from Maryland, Massachusetts and Michigan to Nevada, Washington, Oregon and, at long last, Colorado.

Marijuana Deals Near You

On May 8, Cookies arrived in the state, bringing with it such legendary strains as Gary Payton (made in collaboration with the NBA great himself), Gelatti, Cheetah Piss, Pancakes, White Runtz, Georgia Pie and Sticky Buns, among other wild, sweet and imaginative creations. Lemonnade, another brand in the Cookies box, is now also available in the state for the first time; it focuses on sativa-dominant strains. While Cookies doesn’t sell the original Girl Scout Cookies strain, it does offer consumers popular phenotypes based on it.

Colorado’s Cookies are grown exclusively by local cultivator Veritas Fine Cannabis, a craft-cannabis company born in 2011. It’s a match made in grower heaven.

“We’ve been on the market for about five months now,” says Jon Spadafora, director of sales and marketing for Veritas. “It’s been great; we were really happy with the way the market has responded. Obviously, there’s a bit of concern whenever you launch a brand. The Cookies brand is so popular. … This is a very different product. It found a home very quickly.

“Cookies is a lifestyle; Cookies is a true lifestyle,” he adds. “A lot of brands try to say they’re lifestyle brands, but there are a lot of people who are invested in this culture, and it’s really amazing to see.”

The partnership between Cookies and Veritas came through Slang Worldwide, a distributor of branded products that’s helped champion the Cookies expansion into new markets. “One thing that drew us to it, and what we love about this partnership, is it is authentic,” Spadafora continues. “Berner cares, Berner’s involved. He’s involved in the decision of what strains go to market. And then his music supports those strains. It’s been incredible to watch. We were blown away by the fact that their team shares a similar passion for the plant that our team does. There’s a very personal connection to cannabis, and everyone really cares.”

The California-based Cookies team has been involved with the Colorado expansion from the beginning, with rigorous SOPs and requirements for the vetting process, explains Spadafora. “They actually came to our facility,” he says. “After going through, meeting with our head of cultivation and some of the other team, they understood that we have a really similar style at heart, a very similar nutrient program.”

Even if the Cookies story is unique.

Cookies’ namesake strain, Girl Scout Cookies, is among the most famous and imitated in the growing world. GSC’s roots stretch back to the 2010s in the Bay Area, where it was created by the Cookies Fam, a medical community of powerhouse California growers. The strain was said to be a cross between South Africa’s Durban Poison and Southern California’s OG Kush.

It took off quickly. Less than a decade later, thousands of phenotypes can be found around the world. Seed banks claim to sell the “real Girl Scout Cookies” strain; storefronts from California to Amsterdam sell a GSC strain. Colorado has had versions on the shelves for close to a decade. There is no one true GSC at this point; it’s been bred, crossed and sold far beyond its original form. Unable to formally copyright the strain — a perk not yet available to cannabis — Cookies won’t press charges against any dispensary or grower claiming to grow GSC, not here in Colorado or anywhere else.

But some of those dispensaries have been the focus of other legal action. In 2017, the Girl Scouts of America sent cease-and-desist letters to dispensaries that were using the Girl Scout Cookies name and logo, but the organization has never pressed charges. In the meantime, the scope of GSC has grown wildly out of the group’s control.

Unlike most transplants from California, Cookies received a warm welcome in Colorado.

“There was a concern about how Colorado would respond to a brand out of California,” Spadafora admits. “In Colorado, there are a lot of similarities with the states, but we’re pretty proud of our market. We were really excited. Once we went through and understood that this is more than just a brand with someone’s name on it, the fundamentals are strong. They really understand what they’re talking about, and they truly care. So far, it’s been a really phenomenal partnership.”

The introduction of the Cookies brand brought a new level of strain obsession to the Colorado marketplace. One of the more notable differences with Cookies is that the consumer can try a specific strain, as opposed to similar strains on the similar end of the spectrum. “Cookies is very different; for us it was a bit of a learning curve,” Spadafora says.

Veritas’s goal was to get as many Cookies strains on the market as possible from the start in order to familiarize buyers with the brand and its story. Now it’s working to introduce a regular rotation of new strains. “There will always be something new every month to month and a half moving forward,” Spadafora says. “Now that we’re rolling and established, we’ll start adding a lot more strains to the lineup.”

Which strains have proved the most popular in Colorado? “Everyone loves Gary Payton,” he notes. “Georgia Pie is next, another one of my favorites. Then I would say Cake Mix and Blanco from the Lemonnade side of things. Those four have really, really done well. People are big fans of White Runtz, too.”

But according to Spadafora, Colorado consumers can’t go wrong with Cookies. “There hasn’t been a strain someone hasn’t liked,” he promises. “But you do see more velocity with certain ones. The Cookies legacy strains like Gary Payton and Georgia Pie, that have been there for a long time, definitely get a lot of attention on the retail side.”

And what’s coming soon? “All the big Cookies hitters are going to eventually be in the market,” Spadafora says. “A couple that are definitely on the way here are London Pound Cake, Cereal Milk. Some of the new ones, as well; they’re in production. We’ll start seeing new strains toward the end of this year, early next year.”

In the meantime, Spadafora has a hot tip on a secret Cookies strain. “My personal favorite is the Grandiflora Project 4510,” he reveals. “It’s one of the lesser-known Cookies strains. Grandiflora focuses on very complex strains; the flavor profiles are very interesting. The look and the smell of the flower — it doesn’t look like anything else you see in the garden. For me, it’s a very relaxed, very stoney but not too stoned high, which I enjoy. It’s a good way to decompress and not feel out of touch from the rest of the world. All the people in the garden, this is everyone’s secret strain. This is just the most flavorful. It’s really based on the substance of the flower. This cannabis really is super special.”

His second-favorite strain? Pancakes. “My wife describes Pancakes as the Xanax of cannabis, very relaxing,” Spadafora explains. “A good ‘My day is over, I want to just relax’ strain. And both of those have done great for us.”

Even so, launching a brand during a pandemic wasn’t all “butterflies and rainbows,” Spadafora recalls. “It’s funny for our team. The idea of launching a new brand in a market is terrifying in normal times. During a pandemic, it’s even scarier. It’s been cool to be a part of something that people get excited about, and we can see them get excited. In a time that a lot of things that normally make us happy aren’t available, it’s something that has been a bright spot for people.”

You can find Cookies at plenty of stores in the area, including A Cut Above, Colorado Harvest Company, Diego Pellicer, The Dab, Simply Pure and Wolf Pac. The strains stand out with their playful packaging, with bright, whimsical animation atop an iconic blue backdrop. And you’ll soon see Cookies in more spots.

“They’re the biggest cannabis brand in the country; they’re in every state,” says Spadafora. “But they understand they’re still learning; it’s still very early in this, and they’re looking for feedback, growing — which is phenomenal. They’ve been really open and communicative all along.

“One thing I love about the relationship is that they don’t look at this like McDonald’s, where every place does the same burger,” Spadafora concludes. “They understand that cannabis responds differently to different regions and climates. And they are actually really happy to hear back from our grow team about what’s working, what’s not working, what’s doing well. Refining.”

Cookies is opening its first dispensary in Colorado on Thursday, November 5, at 2057 South Broadway.

"The reaction has been positive," Rudd told NowThis. "Every once in awhile somebody doesn't want anything to do with a cookie or talking to anybody, but usually people feel good because they've (voted) ... And so everybody is in a pretty good mood."

One of the weirdest parts of modern presidential campaigns is the custom in which the candidates’ spouses face off with cookie recipes. None of the recipes have been too impressive, honestly, and Bill Clinton totally cheated in 2016 by recycling Hillary’s recipe from when he ran. The very best White House cookie recipe comes from a First Lady whose husband ended up in office by default: Betty Ford. (No matter how she got to the White House, Betty Ford was still the coolest.) There are some people who prefer fruit to chocolate. We should be kind to them, because everyone has their preferences. For these people, we have jam-filled thumbprint cookies. This cookie is also ideal for entertaining small children: for once, they’re encouraged to stick their fingers in food! Hello! With the cooler weather, I’m in the “cookie baking mood.”

I prepare early for the holidays that seem to creep up on us so quickly. I bake a batch or two of cookies a week and freeze them. This keeps them fresh.

This week’s recipe is one of my favorite cookies. To me, it tastes like the cupcakes you used to buy that came two to a pack and had a center filling in them that is so good. I loved those orange cupcakes. That sweet orange flavor in a cookie is just wonderful.

Most people are really surprised when they bite into these cookies. The flavor is really good, and the orange is a very pleasant surprise. Just be prepared because this is a, “can I have the recipe for that cookie,” kind of treat.

White Chip Orange Cookies

-1 cup margarine

-2/3 cup brown sugar packed

-1 egg

-2 teaspoons orange zest

-2 teaspoons orange extract

-2, 1/4 cups flour

-3/4 teaspoon baking soda

-1/2 teaspoon salt

-1 (12 oz) package white chips

First, beat together margarine, brown sugar and egg until light and fluffy.

Next, add orange zest, orange extract, baking soda and salt. Once those ingredients are mixed well, slowly add in the flour until the flour is well mixed in it as well.

Then, gently stir in chips.

Bake at 350 degrees Fahrenheit on a cookie sheet for 10 to 12 minutes.

If you are going to freeze them, just make sure to completely cool the cookies before putting them in freezer bags and transferring them to the freezer. Enjoy!

It's crunch time for voters. And not just because we're only a few days from Election Day.

Laura Merkel, owner and operator of the Laura the Cookie Lady bakery in Ephrata has something that every voter can agree on: sugar cookies. 

Merkel is baking and selling iced sugar cookies featuring airbrushed stenciled images of President Donald Trump and former Vice President Joe Biden using her prize-winning recipe from her appearance on the Food Network's "Christmas Cookie Challenge" last year.

The four-inch square cookies sell for $4 each. Merkel says she's presold orders and shipped them across the country. And they're a hit with her regular walk-in customers. 

"Everybody thinks they're hysterical," Merkel says. "I love the fact that people get such a kick out of them."

Merkel says she baked probably around 800 of her election cookies. She's seen a clear favorite in the cookie polls. 

"I've definitely done double the Trump compared to the Biden," Merkel says. 

Merkel says people are buying the cookies as supporters and as gag gifts.

"I've had somebody buy two dozen Trump cookies to give to their friends who support Trump and to give as a gift to antagonize people that don't like him, and same thing with the Biden cookies," Merkel says.

Merkel says things like the election cookies are helping supplement income lost as events have been canceled due to COVID-19.

The shop is open on Fridays and Saturdays 11 a.m. to 4 p.m. So this weekend is your last chance to pick up cookies before the election on Tuesday. 

Asked whether she thinks the cookies sales are an indicator of the 2020 Presidential election, Merkel only laughs. 

"I don't know," she says. 

One thing is for certain: the results of Merkel's election cookies are sweet.

"The reaction has been positive," Rudd told NowThis. "Every once in awhile somebody doesn't want anything to do with a cookie or talking to anybody, but usually people feel good because they've (voted) ... And so everybody is in a pretty good mood."

Video, above and below, captured Rudd handing out blueberry cookies to grateful -- and surprised -- voters.

"I was standing in line and I thought Paul was just there to vote, but then he starts handing out cookies to people in line," Brian Rosenworcel, drummer for the band Guster, told CNN. "And he waited to greet people as they exited to say thanks for voting in the rain."

Bakery Presidential Cookie Poll Accurately Predicted President Last Nine Elections - Spectrum News 1

CINCINNATI — It’s a stressful time for many as we head into election week. But one bakery is trying to make their customers laugh a bit this election season. 


What You Need To Know

  • Busken Bakery has done a presidential cookie poll every presidential election since 1984

  • The poll has accurately predicted the winning president all nine elections

  • As of Wednesday afternoon, President Trump was winning by about 3,000 cookies

​Everyone loves a good cookie. But what if that cookie could predict the next president?

“Ironically, nine elections later, we’ve accurately predicted the next president," Dan Busken, the president and CEO of the bakery said.

That’s exactly what’s happened at Busken Bakery. The family-owned business started the presidential cookie poll during the 1984 election. The cookies, stamped and airbrushed by hand, have become a popular tradition in Cincinnati.

“When I look back, yes," Christy Botos, a cookie decorator at Busken Bakery said. "It’s kind of nice to say ‘hey I did those cookies!’ You know what I mean?”

The technique isn’t too complicated. Picking the colors for the candidates faces may be the hardest part.

“I just do this one lighter," Botos explained.

But the outcome has drawn thousands of people in to buy these unique cookies to support each candidate. 

“I called up my friend and said hey let’s go for a ride," Gloria Noday, a Busken Bakery customer said. "We came down to Hyde Park and it was a nice morning for us. And then we can support our president, we are all happy to support our president.”

Busken’s grandfather opened the bakery back in 1928. Busken says the bakery is centered on tradition and also having a little fun.

“This is just an example of taking the edge off and the tension around this election to say 'hey customers come in, pick a cookie, pick ten cookies'," Busken said. "If you want to stuff the ballot box, buy 30 cookies. Do what you want and vote with your gut and just have some fun.”

Busken says it would be pretty cool if their poll was right once again.

“We’re kind of hoping to maintain our streak," he said. "Ten elections in a row would be really awesome.”

As of Thursday, Trump is in the lead by over four thousand cookies. 

“We’re ahead, so now we’re going to add to it citywide!” Noday said.

And while that is a close margin, Trump only won by about 1500 cookies last election. Busken says it’s a close call, but the results now could indicate what happens Tuesday night. 

“Typically by this time, the results are kind of set," he said. "We haven’t ever really experienced an eleventh hour swing for one candidate or another.”

Paul Rudd handing out cookies to voters was a really nice thing that happened today - For The Win

Paul Rudd is already one of the Best Celebrity Men but he further cemented his status as all around delightful dude by handing out cookies to voters outside of Brooklyn’s Barclay’s Center on Thursday.

According to social media posts, Rudd swung by and being the chill, down to earth dude that he is, passed out individually wrapped corn and blueberry n’cream cookies to help make the rainy wait slightly more bearable. Rudd, who wore a mask and gloves in deference to coronavirus protocols, also posed for photos with fans. Unsurprisingly, it looks everyone seemed to enjoy getting free cookies from a celebrity!

I don’t know how to explain it, but something about Paul Rudd just radiates kindness and decency, which seem to be in short supply these days. Maybe it’s the boyish good looks, even though he’s 51, maybe it’s his ability to make the best football trash talk videos, or maybe because he does stuff like invite random Kanas City Royals’ fans back to his mom’s house for a kegger.

The point is, he seems to be a decent, creative and funny dude, and despite coronavirus concerns, I would 100% eat a cookie Paul Rudd handed me. Actually, that’s not true. I’d probably just keep it in my fridge with a note that said, “Paul Rudd gave me this cookie!!” and look at when I felt sad, but you get the point.

We’re living through an intensely horrible and stressful time and anyone offering up some genuine human connection, especially someone who is so rich and famous that he doesn’t have to, is welcome.

I mean, just look at those fan photos. You can tell by his eye crinkles that he is smiling just as widely as the people next to him. I truly and deeply love him for this. I know that Paul Rudd handing out cookies is not going to save our democracy or our republic or end voter suppression but it has eased some of my anxiety about the world being a miserable and dark place, made only for the craven and powerful few.

“It should not be hard to vote,” Rudd told Now This News. “Polling places should be everywhere. This should be easy, not difficult.”

So, if you haven’t already, go out and vote. It’s what Paul Rudd would want.
